Yunnan Big Snow Black (Dian Hong)
Yunnan Big Snow Black tea (also known as Dian Hong) is easily identified by its abundance of soft golden tips. This artisan tea hails from the Big Snow Mountain area of Mengku in Lincang; a high-alttude area that is home to many tea gardens.
Big Snow Black is made up of Assamica tea leaves plucked from 30-40 year old bushes growing naturally at 1,800 metres. The leaves brew up a deep red tea soup, with cacao and maple syrup at the front-end, and smooth thick sweet after-taste. The flavour becomes earthier and more layered as it cools.
Its underlying sweetness goes well with a late afternoon slice of Madeira cake or a sticky piece of baklava and an easy reading mystery. It is also a very forgiving tea and will not taste bitter when over-steeped.
Smooth and complex, with cacao and maple syrup notes.
