Step aside, green tea. There's a new colourful tea in town, and it's a dazzling shade of blue.
Blue Blossom tea is made from the butterfly pea, an ancient Thai herb. The leaves, blossoms, seeds, and roots are all used as medicinal herbs - but mostly, the dried blossoms are used. The blossoms are wild-grown, blooming two to three months after planting. They are harvested in the morning, then left to sun-dry for two days.
In Southeast Asia the blossoms are used as a natural food colourant - add to the kid's muffins, smoothies, or ice blocks for a splash of blue. For adults, blue lattes and cocktail experiments beckon. And if you want to change it up, add some fresh squeezed lemon or lime juice and watch your creation turn purple or pink!
Butterfly pea blossoms certainly will tickle your fancy and take you on a culinary adventure, but did you know they are also good for your health? They contain powerful antioxidants that can help prevent and repair cellular damage from free radicals. They are also credited with being able to increase collagen production and skin elasticity, which would give them excellent anti-aging properties.
When infused in hot water, the blossoms create an aroma similar to green tea but more woody and earthy to the palate. Add lime or lemon juice and a little honey for flavour.
