The Nilgiri district lies in the southern Indian state of Tamil Nadu. Tea here is grown in elevations ranging from 1,000 meters to 2,500 meters above sea level. The region enjoys close to 60 inches to 90 inches of rainfall every year. These teas are intensely aromatic and flavourful with lingering notes of dusk flowers and tropical fruit.
Winter Star is the first tea to be harvested each year, when most camellia bushes are in dormancy. It is distinguished by its variegated leaf: short lengths of dark wiry black leaf sprinkled with slivers of green tea leaf. When infused, the leaves deliver a light, straw-yellow tea infusion with notes of wild grasses, barley and crisp apples.
Brewing Advice: 2-3 grams, 90-95 degrees, 3 minutes (multiple infusions)
Meet the Maker: Tea Studio is an experimental tea factory run by five talented Indian professionals. A state-of-the-art tea factory, powered partly by LPG, is at the heart of project. The company acquires organically-grown tea from nearby small growers and processes the leaves using methods novel to the Nilgiri region. The outcome is a collection of boutique teas, many in the Chinese style.
